Fresh Scrambled Ham and Egg Salsa Wrap

- 8 eggs
- 1/4 cup (50 mL) milk
- 1 tbsp (15 mL) butter
- 1/2 cup (125 mL) country ham, diced
- 2 green onions, chopped
- 4 flour tortillas
- 2 tbsp (30 mL) mayonnaise
- 1/2 cup (125 mL) grated cheddar cheese
- 1 cup (250 mL) fresh summer salsa
- Salt and pepper to taste
In a large bowl, crack eggs and whisk with milk; set aside.
In a frying pan over medium heat, heat butter and sauté ham and onions for a few minutes, then add egg mixture and scramble, seasoning with salt and pepper to taste. Once cooked, set aside and start assembling: spread tortilla with ½ tbsp (7 mL) mayonnaise and add scrambled egg mixture topped with 1 oz (28 g) grated cheese and 2-3 tbsp (30-45 mL) fresh salsa. Wrap and serve. Simple, quick and guaranteed to be a winner.
