Canadian Bacon and Goat’s Cheese Fondue

This non-traditional fondue recipe is a culinary melting pot. I like the velvety smooth texture of the béchamel sauce base, and by using a roux, you get the added security of no fondue separation. The goat's milk mozzarella melts nicely and the fresh goat's cheese provides a subtle tang, while the bacon and chives add nice colour and texture for garnish.
