Ingredients

1 3/4 cup (390 g) flour
1 3/4 cup (390 g) apple juice
¼ cup (60 g) sunflower oil
6 egg whites
1 ½ tbsp (20 mL) sugar
1 tsp (5 mL) salt
6 apples, peeled, cut in ¼ inch

Directions

Mix flour, oil and apple juice together, beat egg white, sugar and salt to snow and mix under the dough. Flour the apple rings and cover with dough and bake straight away in the deep fryer till golden brown. Remove from fryer and immediately coat dumplings with cinnamon sugar.

Vanilla Custard
  • 1 cup (250 mL) cream
  • 1 cup (250 mL) milk
  • 4 egg yolks
  • 1 ½ tbsp (20 mL) sugar
  • 2 tsp (10 mL) vanilla

Bring milk and cream to boil with sugar, then add the vanilla to the boiling milk/cream. When milk/cream is boiling, add egg yolk and cook slowly until it becomes thick.

After cooking, pass through a sieve in a bowl and put the bowl straight on ice water to chill the mixture quickly; then you are ready to serve.

Makes 2 cups (500 mL)
