1 1/2 cups (375 mL) apricot jam
1/2 cup (125 mL) water
1 tablespoon (15 mL) granulated sugar
1 teaspoon (5 mL) grated orange rind
1 tablespoon (15 mL) rum
1/2 cup (125 mL) chopped walnuts
Combine apricot jam, water, sugar and orange rind in a saucepan set over medium-high heat; bring mixture to a boil. Reduce heat and simmer for 5 minutes, stirring constantly. Remove from heat. Stir in rum and walnuts. Serve warm or at room temperature over ice cream. Makes 2 cups (500 mL).
