2 tomatoes, deseeded and finely diced
½ med yellow pepper, finely diced
½ English cucumber, finely diced
2 shallots, finely diced
2 ribs celery, finely diced
2 tbsp (30 mL) olive oil
2 cups (500 mL) vegetable broth
2 cups (500 mL) Clamato juice
2 tbsp (30 mL) Tabasco sauce
2 tbsp (30 mL) Worcestershire sauce
3 tbsp (45 mL) horseradish
2 tsp (10 mL) celery salt
Fresh ground pepper to taste
½ cup (125 mL) vodka (optional)
6 pickled beans for garnish


Place the tomatoes, peppers, cucumber, shallots and celery in large bowl; add the olive oil, vegetable broth, Clamato juice, tabasco, Worcestershire and horseradish. Stir well and season with celery salt and pepper. Add vodka if using. Refrigerate for at least two hours before serving. Garnish with pickled beans.
