Chicken Curry with Dates and Raisins

Ingredients

2 cups (500 mL) chopped chicken or turkey
2 stalks sliced celery
1/2 cup (125mL) dried fruit (golden raisins, dates, figs, apricots or any combination)
1/2 cup (125mL) nuts (slivered almonds, walnuts, pistachios, candied pecans or any combination) 
3 tablespoons (45mL) low-fat mayonnaise (enough to bind ingredients together)
zest and juice of one orange
1 teaspoon (5mL) dried curry powder
salt and pepper to taste
1 heaping tablespoon (15mL)brown sugar, just enough to add depth to this delicious sandwich topping
Boston lettuce, Chinese cabbage, buttered pita or crusty rolls
 

Directions

Mix all ingredients together to form a soft sandwich spread. For a lighter lunch, pack this separately to roll in Boston lettuce leaves or on top of Chinese cabbage sections. This filling does well in buttered pita or crusty rolls as well. Makes 2 large sandwiches.
