Chocolate No-Bake Squares

Ingredients

1/2     cup (125 mL) margarine
2     cups (500 mL) chocolate chips
1     cup (250 mL) peanut butter (smooth or crunchy)
1/2     teaspoon (2 mL) vanilla
2     cups (500 mL) mini marshmallows
2     cups (500 mL) Rice Krispies cereal
1/2     cup (125 mL) coconut (unsweetened)

Directions

Place a large saucepan over low heat. Add margarine, chocolate chips and peanut
butter and stir constantly until melted. Remove from heat; add vanilla and stir. Add all remaining ingredients. Stir together quickly and pat into a 9x9 inch (23x23 cm) greased baking dish. Cover with plastic wrap and chill. When cooled, cut into 25 squares.

Keep refrigerated until ready to serve.

Variations: You can use flavoured chocolate chips, large marshmallows which have been cut up smaller, Special K instead of Rice Krispies and whole or chopped unsalted nuts (walnuts, pecans, peanuts, etc.) in place of the coconut or omit them altogether.
