Curried Cranberry Chicken Salad

Ingredients

3/4    cup (175 mL) mayonnaise
2    teaspoons (10 mL) lime juice
3/4    teaspoon (3 mL) curry powder
2    cups (500 mL) cubed cooked chicken
1    medium red apple, cut into half-inch (1 cm) chunks
3/4    cup (175 mL) sweetened dried cranberries
1/2    cup (125 mL) thinly sliced celery
1/4    cup (50 mL) chopped pecans
2    teaspoons (10 mL) thinly sliced and chopped green onions (optional)

Directions

In a large mixing bowl, combine mayonnaise, lime juice and curry powder. Stir in chicken, apple, cranberries, celery, pecans and green onion. Cover and chill for up to 8 hours. Makes 4 servings.
