Green Tomato Bread

Ingredients

1 1/2 cups (375 mL) ground green tomatoes
1/2 cup (125 mL) grated tart apple
2 cups (500 mL) granulated sugar
1 cup (250 mL) canola oil
3 eggs, beaten
1 teaspoon (5 mL) vanilla
3 cups (750 mL) all-purpose flour
1 teaspoon (5 mL) baking powder
1 teaspoon (5 mL) baking soda
1 teaspoon (5 mL) salt
2 1/2 teaspoons (12 mL) ground cinnamon
1/4 teaspoon (1 mL) ground cloves
1/4 teaspoon (1 mL) grated nutmeg
3/4 cup (175 mL) chopped or ground walnuts
1/2 cup (125 mL) raisins (optional)

Directions

In a large bowl, combine green tomatoes, apple, sugar, canola oil, eggs and vanilla. Into a separate bowl, sift flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg. Stir dry ingredients into wet ingredients.

Add walnuts and raisins, if using, and stir to combine. Divide mixture between two greased 9x5-inch (23x13 cm) loaf pans. Bake in 325°F (160°C) oven for 1 hour, or until a tester inserted in centre comes out dry. Makes 2 loaves.
