Ingredients

2 tbsp (30 mL) butter
3 apples, peeled, cored and cut into wedges (reserve peel and cores)
¼ cup (50 mL) brown sugar
2 cups (500 mL) water
2 cups (500 mL) hard apple cider

Directions

In a frying pan melt butter then sauté the apple wedges and brown sugar for 10 minutes or until apples are tender enough to pierce with a fork. Remove from heat and allow to cool for 10 minutes.

In a medium sauce pan bring the reserved peels, cores, and water to a boil over medium-high heat, reduce and simmer for 5 minutes.

Remove from heat and strain liquid into a 1-cup measure, fill the remainder with water. Discard peels and cores. Combine the liquid with the hard cider.

To assemble: place apple wedges in a mould of choice, fill to the halfway point. Pour in the hard cider mixture and insert a stick. Once all the popsicles are assembled, Freeze for 6 to 8 hours, or until completely solid.
