Ingredients1/2 lb (250 g) finely chopped snow crab meat
2 tbsp (30 mL) mayonnaise
1/2 tsp (2 mL) chipotle pepper sauce
1/2 lime, juice only
2 sprigs cilantro, chopped
2 English cucumbers, cut into 1-in pieces
pink peppercorns, for garnish
In a medium-sized bowl, mix snow crab, mayonnaise and chipotle sauce. Add lime juice and cilantro. Mix and refrigerate for 30 minutes.
Hollow out half of meat from each cucumber piece, leaving just enough to keep the bottoms sturdy. Place cucumbers on serving platter. Fill with the crab mixture, garnish with cilantro and pink pepper corns.
