2 cups (500 mL) green split peas
10 cups (2.5 L) water
1 onion diced
4 smoked bratwurst sausages
1/2 tsp (5 mL) fresh ground pepper
1/2 tsp (5 mL) salt


Place split peas in the bottom of a large pot and pour water on top. Bring to a boil over high heat then reduce to medium-low and simmer for 1½ hours, stirring occasionally. If the water level gets too low, top up with boiling water.

After 1½ hours, add onion and continue to simmer for a final half hour. Add in bratwurst and heat through. There is no need to puree this soup as the peas will soften completely during the cooking process.

Serve each bowl of soup with a sausage – either whole or sliced – and enjoy.
