Veggie Sandwich

Ingredients

4 individual ciabatta loaves
1 cup (225 mL) sundried tomato hummus
4 to 6 oz (115 g to 170 g) shredded sharp Canadian cheddar
2 tomatoes, sliced
1 English cucumber, cut in half and sliced lengthwise
½ cup (125 mL) grated carrot
8 lettuce leaves

Directions

Slice ciabatta loaves in half and generously spread both sides with the hummus. Cover the bottom half of each sandwich with half of the lettuce. On the top layer the tomato, English cucumber and the shredded carrot and cheddar cheese. Top with remaining lettuce and the remaining ciabatta bread.
