Mushroom Brie Omelet with Pepper Jelly - Bonny Cross (Tancook Island,NS)

Living on a small island accessible only by boat has always provided Bonny with challenges when it comes to cooking, as having the actual ingredients that a recipe calls for isn’t always an option. As a result, Bonny is adept at adapting recipes to use whatever may be on hand. That love of experimentation started when, as a young child, Bonny’s mother would allowed her free range in the kitchen. Her winning recipe was born from that fearlessness; it’s hard to believe that this wonderful dish was the result of cobbling together an odd assortment of leftovers found in the fridge!
