Third place winner Justine Anderson, Port aux Basques, NL

Passion for healthy living and nature led Justine to follow her dad from Halifax, NS to Port aux Basques, NL. The landscape fuels her love for creating wellness products, which she sells at her kiosk called Wildflower Company (wildflowerco.com), located on the waterfront in Port aux Basques, as well as online.

Justine’s desire to eat great food inspired her amazing sweet potato burger; her goal was to create a meatless meal that was both satisfying and delicious, and we think she knocked it out of the park. Justine makes this for her family on a regular basis and we think we may do the same.

Sweet Potato Burger w/Quinoa & Black Beans

Serves 4 

2          sweet potatoes (peeled, boiled, mashed)
1          cup (250 mL) cooked quinoa
1          can (14 oz/398 mL) black beans (mashed)
1          egg
1/2      cup (125 mL) feta cheese
3-4       green onions
1          bunch parsley
3          cloves garlic (minced)
2          tbsp (30 mL) chili powder
1          tbsp (15 mL) curry powder
Salt & pepper to taste

Cook sweet potato and quinoa separately, then mash sweet potato and black beans together. Combine all remaining ingredients, form into patties and fry in olive or coconut oil in pre-heated pan over medium-high heat. Finish in pre-heated 400°F (205°C) oven for 7 minutes. Serve by itself or on your favourite bun with condiments.
