Wash, pare, and slice apples, to make about 7 cups (1.75 L). In a medium bowl, toss the apples with ½ cup (125 mL) of the sugar, 2 tbsp (30 mL) of the flour and the nutmeg. Pile high in the pie shell and sprinkle with lemon juice.
In a small bowl, mix the remaining sugar, flour and the butter together to make a soft paste; spread this over the apples.
Place pie in the paper bag and close the end. Bake at 400°F (205°C) in centre of oven for 1 hour, or until nicely browned.
Remove from oven and cool 5-10 minutes before carefully removing the pie from the bag. Serve warm, with your favourite cheese or ice cream.
Note: Susie Sweeney jokes that the most difficult part of this recipe is finding the paper bag. She also says it’s important to keep the bag from touching the oven element, for obvious reasons!
