Apple Torte

Ingredients

Base
1/2 cup (125 mL) butter
1/3 cup (75 mL) granulated sugar
1 cup (250 mL) all-purpose flour
1/2 cup (125 mL) strawberry or raspberry jam

Filling
1 8-ounce (250g) cream cheese, softened
1/2 cup (125 mL) granulated sugar
1 egg
1/2 teaspoon (2 mL) vanilla

Topping
4 cups (1 L) apples, peeled, cored and sliced
1/3 cup (75 mL) granulated sugar
1/2 teaspoon (2 mL) ground cinnamon
1/2 cup (125 mL) slivered almonds

Directions

Cream together butter and sugar; add flour and stir until mixture resembles coarse crumbs. Press into the bottom and 1 inch (2.5 cm) up the sides of a 9-inch (23 cm) springform pan. Spread jam on the bottom crust. Mix filling ingredients until smooth and spread evenly over base. Toss apple slices with sugar and cinnamon and arrange gently over filling. Sprinkle slivered almonds over the top.

Place springform pan on a baking sheet and bake in preheated 400°F (200°C) oven for 10 minutes. Reduce oven temperature to 350°F (180°C) and continue to bake for 30 minutes or until apples are tender. Cool. Serve with whipped cream or ice cream.
