Cut each slice of bacon in half and wrap around a potato; secure with a toothpick.

Line a cookie sheet with parchment paper; place potatoes on sheet and bake at 350°F (180°C) for 30 minutes, or until bacon is browned.

Remove from oven and drizzle with honey. Serve with sour cream, if desired. Makes 4-6 servings.
