3 cups (750 mL) mashed potatoes (about 2 lbs or 1kg)
1/4 cup (50 mL) sour cream
1/4 cup (50 mL) butter
1 1/2 tbsp (17 mL) green onions, chopped
1/4 cup (50 mL) double smoked bacon bits
1/2 cup (125 mL) cheddar cheese, shredded
Pepper to taste
1/4 cup (125 mL) flour
Chopped chives for garnish


In a medium bowl, mix mashed potatoes, butter, green onions, bacon bits, green onion and cheddar. Add eggs, mix well and let cool. Form into 2 oz (57 g) cakes, roll in flour and grill in melted butter. Serve with a drop of Jalapeno Haskap Relish and garnish with chopped chives. Makes 4 to 6 servings.
