2 lbs (1 kg) potatoes ¼ cup (50 mL) shallots, chopped 1 clove garlic, chopped ¼ cup (50 mL) heavy cream ¼ cup (50 mL) butter ¼ tsp (1 mL) sea salt to taste ½ tsp (2 mL) milled pepper to taste 1 cup (250 g) lobster meat, chopped 8 chives, chopped ½ cup (125 ml) parmesan cheese, grated 4-6 lobster claws for garnish
Directions
In a medium-sized pot, boil potatoes, shallots and garlic for 10-15 minutes until tender; drain. Add cream, butter, salt and pepper; mash until smooth. Fold in lobster, chives and cheese. Garnish with lobster claws and enjoy.
