Caramelized Bacon
Ingredients
1 1/2 cups (375 mL) firmly packed brown sugar
1 pound (1/2 kg) bacon, regular thickness
Directions
Spread brown sugar evenly in a shallow pan. Lay bacon strips in the sugar and pat firmly so sugar adheres to bacon. Turn once to coat both sides. Line a rimmed cooking sheet with foil and set a wire rack on it. (The foil will make cleanup easy, since some of the sugar will melt and fall through the rack.)
Place coated bacon strips on the rack.
Bake at 350°F (180°C) for 15 minutes on one side and 10 minutes on the other, or until crisp. Remove strips to a rack to cool. Serve at room temperature. Makes 8 servings.
Make ahead: Bacon can be prepared up to 2 hours ahead and stored at room temperature in a tightly covered container.
Tip: To soften brown sugar that has become hard in storage, place a slice of apple in it for several hours or overnight. This restores the moisture and loosens it up.
