8 ounces (250 g) cream cheese, softened
1/2 cup (125 mL) butter, softened
1 teaspoon (5 mL) vanilla
1 1/4 cups (300 mL) icing sugar
2 tablespoons (30 mL) brown sugar
3/4 cup (175 mL) mini chocolate chips
3/4 cup (175 mL) chopped pecans or
In a large mixing bowl, combine cream cheese and butter until smooth. Add vanilla, icing sugar, brown sugar and chocolate chips; stir until combined. Shape mixture into a ball (if too soft, chill until easy to handle).
Roll ball in chopped nuts to coat. Cover and chill until ready to serve. Serve with your choice of crackers or social tea cookies. Makes about 3 cups (750 mL).
Tip: If the nut-covered cheese ball doesn't firm up enough, turn into a pretty glass bowl and serve surrounded with sweet biscuits.
