Creamy Potato Bake
Ingredients
1 8-ounce (250 g) packaged cream cheese (regular or light), softened
8 medium potatoes, peeled, cooked and mashed
1 egg, slightly beaten
2 tablespoons (30 mL) green onion or fresh chives, finely chopped
1 tablespoon (15 mL) fresh parsley, finely chopped
1 tablespoon (15 mL) butter
Salt and pepper to taste
Directions
Using an electric mixer, whip the cream cheese until light and fluffy. Add the mashed potatoes and beat until well combined and smooth. Stir in beaten egg, green onion or chives, and parsley. Season to taste with salt and pepper. Place potato mixture into a well-greased casserole dish, dot with butter and bake in a preheated 350°F (180°C) oven for 40-45 minutes.
