Pickled Wild Blueberries

Ingredients

1          
pound (500 g) wild

            blueberries

1          
cup (250 mL) white vinegar

¼         
cup (50 mL) wild 
blueberry juice

¼         cup (50 mL) white sugar

1 ½      tbsp (23 mL) salt

1          
small red onion, 
thinly sliced

Directions

Whisk vinegar sugar salt and blueberry juice in a medium bowl until sugar dissolves. Place blueberries and onions in a 750mL jar. Cover with liquid, add lid and place in refrigerator overnight.

Perfect pairing for salads, sandwiches, charcuterie boards, accompaniment to cheese, 
etc.
