Restaurant-Style Chicken Wings

Ingredients

2 pounds (1 kg) fresh chicken wings
1 tsp (5 mL) sea salt
1 tsp (5 mL) ground pepper

Directions

Take the time to remove chicken wing tip then separate the drumettes and wingettes, place in a medium size bowl then toss with salt and pepper. Place wings on a parchment lined baking sheet. Cook at 350°F (180°C) for 15 to 20 minutes or until an internal temperature of 165°C is reached. Let rest then remove access liquids. This step can be done ahead and the wings refrigerated until you are ready to cook and serve.

Pre heat a deep fryer to 370°F (185°C), place chicken wings into the fryer basket in a single layer, submerge into hot oil and fry until golden brown and meat along the bone is no longer pink, approx. 4-6 minutes. Lift basket from the oil and shake off excess oil, toss the wings in a bowl with your favourite Maritime Madness sauce.
