Roasted Red Pepper Hummus

Ingredients

1 19 oz (540 mL) can chick peas, drained
3/4 cup (175 mL) olive oil
1/4 cup (50 mL) roasted red pepper (substitute with ½ tsp (2 mL) chili flakes or cayenne pepper)
1/4 cup (50 mL) chopped fresh parsley
1 1/2 tsp (7 mL) lemon juice
2 cloves garlic, crushed
1 tsp (5 mL) tahini
1 tsp (5 mL) salt
1 tsp (5 mL) pepper

Directions

Place all ingredients in blender and purée until smooth. Traditionally hummus is served with warm or grilled pita bread; you can also serve it with vegetables or your favourite crusty bread.
