Salmon Skewers
Ingredients
2 pounds (1 kg) salmon belly strips
12-16 bamboo skewers
1 tablespoon (15 mL) black pepper
1 1/2 cups (375 mL) brown sugar
Directions
Thread about a four-inch strip of salmon belly onto each skewer, sticking skewer from one side to the next to curve fish back and forth. This secures fish well. Roll in brown sugar and sprinkle liberally with black pepper. Spray a large skillet with non-stick cooking spray and brown over medium-high heat, turning occasionally until nicely done, about 4 or 5 minutes. Serve while still warm and pass the napkins.
