6 eggs
2 cups (500 mL) cream
1 tsp (5 mL) nutmeg
Salt and pepper to taste
4 cups cubed bread (day old)


This versatile recipe can be made with whatever you have in the fridge. I have listed a few of my favourite variations. It’s great on a brunch menu.

In a medium bowl, combine eggs, cream, nutmeg, salt, pepper and your choice of variations (see right).

Place bread cubes in a 9 x 13 baking pan, pour egg mix over bread and mix in gently; let sit for approximately 20 minutes—this is key! Bake at 350°F (180°C) for 30 minutes or until puffed and golden.
