Sweet Chili Meatballs
Ingredients
2 lb (1 kg) fresh ground beef
1 tsp (5 mL) grated fresh ginger
2 cloves garlic, minced
1/3 cup (75 mL) minced onions
4 sprigs cilantro leaves, chopped
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
1 cup (250 mL) sweet chili sauce
Directions
In a large bowl, combine all ingredients except chili sauce. Form into a golfball-size ball; place on a cookie sheet.
Repeat with remaining mixture. Bake at 350°F (180°C) for 30-35 minutes. Cool and freeze.
To serve: Sauté frozen meatballs in a large frying pan for 2-3 minutes, then add chili sauce and heat for another 2-3 minutes.
Pour mixture into an ovenproof dish and heat at 350°F (180°C) for 15 minutes. (You can use a meat thermometer to confirm that the internal temperature has reached 325°F/160°C). Makes 20-24 servings.
