The Ultimate Western Sandwich
Ingredients
8 large eggs
¼ cup (50 mL) milk
2 cups (500 mL) diced ham
½ cup (125 mL) chopped green onion
½ cup (125 mL) diced red pepper
½ tsp (2 mL) salt
½ tsp (2 mL) fresh ground pepper
2 tbsp (30 mL) olive oil
8 slices, thick cut white bread
4 tbsp (60 mL) butter
8 tbsp (120 mL) mayonnaise
1 large tomato, sliced
1 cup (250 mL) grated cheddar cheese
Fresh spinach leaves
Directions
Whisk eggs with milk, ham, onion, red pepper, salt and pepper. Heat 2 tbsp (30 mL) olive oil in a large skillet. Pour in egg mixture and scramble.
Toast bread; spread with butter and mayonnaise. Add ¼ of the cooked egg mixture; top with a slice of tomato, ¼ of the cheese and a few fresh spinach leaves.
