Ye Olde Gingerbread
Ingredients
1 egg
1/2 cup (125 mL) white sugar
1/2 cup (125 mL) shortening
1 cup (250 mL) molasses
1/4 tsp (1 mL) salt
1 tsp (5 mL) baking soda
1 tsp (5 mL) ginger
1 cup (250 mL) hot water
2 1/2 cups (625 mL) flour
Icing sugar for sprinkling
Whipped cream
Lemon sauce (optional)
Directions
In a large bowl, combine egg, sugar, shortening, molasses, salt, baking soda and ginger.
When thoroughly blended, add hot water; stir, then add flour. Pour into a 9x9-inch (23x23-cm) baking dish. Bake at 350°F (180°C) for 45 minutes, or until a toothpick inserted in the centre comes out clean. Cool and sprinkle with icing sugar. Serve with whipped cream and lemon sauce.
