1 can black beans, rinsed
1 can corn niblets
1 tomato, diced
1 avocado, diced
¼ cup (50 mL) red onions, diced
1 jalapeno, diced
2 tbsp (30 mL) fresh cilantro, chopped
2 tsp (10 mL) cumin
3 limes, juice only
1 tsp (5 mL) coarse sea salt
½ tsp (2 mL) pepper
In a medium size bowl add corn niblets, black beans, red onions, hot pepper and tomatoes. Toss lightly then add avocado, cilantro, cumin, lime juice salt and pepper; fold in and serve.
