Ingredients

  • 1 cup (250 mL) extra virgin olive oil
  • 1 tsp (5 mL) coarse sea salt
  • 2 bay leaves
  • 3 sprigs thyme
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1/2 cup (125 mL) white wine vinegar
  • 1 tbsp (15 mL) Dijon mustard
  • Vegetables such as peppers, mushrooms, onions, eggplant, asparagus, green onions, green or yellow beans, or your favourite cut of beef for grilling

Preparation

Place all marinade ingredients in a medium bowl and whisk until combined. Pour over beef or vegetables. Toss and allow to marinate in refrigerator for about 30 minutes.

Makes enough marinade for 4-6 servings of vegetables or 2 servings of beef.
