Ingredients
- 1 cup (250 mL) extra virgin olive oil
- 1 tsp (5 mL) coarse sea salt
- 2 bay leaves
- 3 sprigs thyme
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1/2 cup (125 mL) white wine vinegar
- 1 tbsp (15 mL) Dijon mustard
- Vegetables such as peppers, mushrooms, onions, eggplant, asparagus, green onions, green or yellow beans, or your favourite cut of beef for grilling
Preparation
Place all marinade ingredients in a medium bowl and whisk until combined. Pour over beef or vegetables. Toss and allow to marinate in refrigerator for about 30 minutes.
Makes enough marinade for 4-6 servings of vegetables or 2 servings of beef.
