Ingredients

  • 12 slices English cucumber, cut on bias
  • 4 oz (125 g) Asian-style wilted spinach
  • 1 lb (500 g) snow crab leg meat
  • 4 oz (125 g) salted diced tomatoes
  • A few tails of chives or chopped herbs

Preparation

First, you’ll need a round ring, about 3 inches in diametre, to use as a mould. (Tip: use PVC pipe from a plumbing store.)

On a plate, place 3 slices of cucumber, tip to tip like flower petals. Set the mould on top and place ingredients inside, one layer at a time, starting with spinach, then crab and then tomatoes. Remove ring; place crab legs on top. Drizzle with citrus honey vinaigrette. Garnish with chives or herbs.
