Ingredients

  • 1 tbsp (15 mL) olive oil
  • ¼ cup (50 mL) champagne vinegar
  • ¼ cup (50 mL) sparkling wine, such as Grand Pré Champlain
  • 2 tbsp (30 mL) shallots, finely chopped
  • 2 tbsp (30 mL) green grapes, such as L’Acadie, skins and seeds removed, chopped
  • 1 tsp (5 mL) fresh cracked mixed pepper
  • Salt and pepper to taste

Preparation

Combine ingredients and chill. Whisk prior to serving with oysters on the half shell.
