Ingredients

  • 1/4 lb (125 g) butter
  • 4 medium yellow onions (julienned)
  • 1 cup (250 mL) wild blueberries (fresh or frozen)
  • 1/2 cup (125 mL) maple syrup
  • 1/2 bottle local craft beer
  • 1/4 tsp (1 ml) salt
  • 1/2 tsp (2 ml) pepper

Preparation

In a medium to large frying pan, melt butter until it starts to brown; add onions and cook until translucent, about 3 to 4 minutes.

Add blueberries, maple syrup, beer, salt and pepper; bring to a boil then let reduce until as little liquid as possible remains without sticking to the pan, approximately 10 to 15 minutes.

Refrigerate until ready to serve. Makes 1½ cups (375 mL).
