Apple and Pasta Party Salad
Ingredients
Dressing
1 cup (250 mL) mayonnaise
1 tbsp (15 mL) yellow curry powder
1 tbsp (15 mL) olive oil
Salad
1 10 oz (300 g) box penne or rotini
1 large Honeycrisp apple, cored and choppedĀ
1 large Granny Smith apple, cored and chopped
1 pear, cored and chopped
1 nectarine, chopped
1 cup (250 mL) red seedless grapes
1 cup (250 mL) green seedless grapes
1 cup (250 mL) chopped sweet honeydew melon
1 cup (250 mL) chopped sweet cantaloupe
1/2 cup (125 mL) dried mixed fruits and nuts
1/2 head broccoli, chopped
1/2 head cauliflower, chopped
1 tsp (5 mL) herb mix for salads
Directions
In a small bowl, mix the mayonnaise, curry and olive oil together. Refrigerate.
Cook pasta per package instructions; rinse in cold water until cool. Set aside.
Chop fruit into 1/2-inch (1-cm) chunks. In a large bowl, combine all salad ingredients. Add dressing and mix until everything is coated. Serve cold. Makes 6 servings.
