Apple and Sausage Quiche

Ingredients

1/2 cup (125 mL) sausage meat 
1/2 cup (125 mL) chopped onion
1/4 tsp (1 mL) dried thyme 
2 Red Delicious apples, peeled and cut into 1/2-inch (1.25-cm) cubes
1 tbsp (15 mL) lemon juice
1 tbsp (15 mL) sugar
1/2 cup (250 mL) shredded medium cheddar cheese 
4 eggs, beaten
2 cups (500 mL) light cream or milk
1 9-inch (23-cm) deep dish pie or quiche crust (uncooked) 
1 tbsp (15 mL) chopped fresh chives

Directions

Remove sausage meat from casings by slicing open casings and scraping out the contents.

In large skillet, combine sausage, onion and thyme, and cook until sausage is browned and onion is tender, about 10 minutes. Remove from heat. Drain off excess fat.

In a bowl, toss apple with lemon juice and sugar. Add the prepared sausage mixture, then add cheese, eggs and cream or milk. Mix well. Pour into pie shell. Stir gently to spread sausage evenly. Sprinkle chives on top.

Bake at 350°F (180°C) for 40-45 minutes, or until set. Let stand 10 minutes before cutting. Makes 6 servings.
