Ingredients

2    dozen medium-sized scallops
1     cup (250 mL) all-purpose flour
2     teaspoons (10 mL) paprika
1     teaspoon (5 mL) salt
1/2    teaspoon (2 mL) freshly ground black pepper
1     teaspoon (5 mL) garlic powder
1     egg
1     cup (250 mL) milk
1     cup (250 mL) fine bread crumbs
8     strips bacon, cut crosswise into thirds
Seafood cocktail sauce
 

Directions

As soon as you bring the scallops home, place them in a single layer in a paper towel-lined dish to drain off excess moisture. Refrigerate until ready to cook.

Line up three shallow dishes. In the first, combine flour, paprika, salt, pepper and garlic powder. In the second, beat together the egg and milk. Place the bread crumbs in the third.

Roll each scallop in the flour mixture, shaking off the excess. Dip into egg mixture, then roll in the bread crumbs, covering completely. Wrap each scallop with a piece of bacon, secure with a toothpick, and place in a lightly greased pie plate or glass baking dish. Bake at 400°F (200°C) for 20 to 25 minutes, until bacon is crisp and scallops are cooked through.

Serve with seafood cocktail sauce. Makes 24 pieces.
