Blender Hollandaise Sauce

Ingredients

3    egg yolks
2    tablespoons (30 mL) lemon juice
Dash cayenne
1/2    cup (125 mL) butter or margarine

Directions

Place egg yolks, lemon juice and cayenne in blender. Quickly pulse on and off. Heat butter until melted and almost boiling. Turn blender on high speed and slowly pour in butter, blending until thick and fluffy, about 30 seconds. Heat over warm (not hot) water until ready to use. Makes 1 cup (250 mL).
