Lady Ashburnham Relish: A Classic NB Recipe
Ingredients
3 English cucumbers, diced
1 tbsp (5 mL) pickling salt
1 cup (250 mL) onion, diced
½ red pepper, diced
½ green pepper, diced
½ cup (125 mL) vinegar
1 cup (250 mL) white sugar
2 tbsp (30 mL) flour
1 tbsp (15 mL) dry mustard
1 tbsp (15 mL) turmeric
½ tsp (5 mL) mustard seeds
½ tsp (5 mL) celery seed
Directions
Place cucumber, onion and canning salt in a bowl, mix well, cover and put in the fridge overnight. Next day, rinse really well. Put everything in a heavy bottom pot. Bring to a boil. Take off heat, set aside and let cool.
Store jars in refrigerator or gift them to grateful friends and family.
