
Larry's BBQ Lamb Kebobs (Shashlik)
Ingredients
3.5 lbs (1.6 kg) lamb, cut in 1 ¼ in cubes
Salt & pepper to taste
1 clove garlic, minced
½ Spanish onion, chopped
1 ½ oz (47 mL) lemon juice
1 ½ oz (47 mL) olive oil
2 ½ oz (71 mL) red or white wine
20 cherry tomatoes
20 fresh button mushrooms
Directions
Make marinade with salt, pepper, garlic, onions, lemon juice, oil, and wine. Stir in lamb and marinate in the fridge for
8-20 hours.
Arrange on skewers, alternating lamb with tomatoes and mushrooms. Place far enough apart on BBQ for heat to reach sides. Brush lamb and vegetables with some of the marinade or oil and baste as they cook. BBQ on one side until brown, turn over and broil until nicely browned. Total cooking time is about 10-15 mins. Heat remaining marinade and thicken it with a flour-and-water paste, to use as a sauce. Serve the shashlik and sauce with your homemade Naan Bread.
Note: in the event that lamb is not your choice of protein. One may substitute pork, chicken or turkey, or beef. For the vegetarian, use any vegetables you like, such as broccoli, Brussels sprouts etc.…
