Maple Vegetable Salsa
Ingredients
½ cup (125 mL) cherry tomatoes, diced½ cup (125 mL) red onions, diced
¼ cup (50 mL) cucumber, diced
¼ cup (50 mL) yellow pepper, diced
2 sprigs cilantro or Italian parsley
2 tbsp (30 mL) olive oil
1 tbsp (15 mL) maple syrup
1 tsp (5 mL) coarse sea salt
few turns of the pepper mill
2 limes, juice only
Directions
While the burgers are cooking, mix all salsa ingredients together. This may also be made ahead and kept refrigerated until needed.
