1/2 cup (125 mL) liquid honey
1/2 cup (125 mL) olive oil
1/3 cup (75 mL) balsamic vinegar
1 tablespoon (15 mL) Dijon mustard
2 teaspoons (10 mL) each of chopped fresh parsley and chives
2 teaspoons (10 mL) finely chopped red pepper
2 teaspoons (10 mL) finely chopped red onion
8 oz (250g) mixed salad greens
1 small red onion, thinly sliced
1 red or yellow pepper, diced
1/2 cup (125 mL) sliced fresh mushrooms
1/2 cup (125 mL) sliced fresh strawberries
For dressing, whisk together in a bowl the honey, olive oil, balsamic vinegar and Dijon mustard until smooth and well blended. Add remaining ingredients and whisk to combine. Cover and refrigerate until serving time.
In a large bowl add all the salad ingredients and toss. Serve balsamic vinaigrette on the side.
