Ingredients

1 garlic bulb
1/2 cup (125 mL) grapeseed oil
1/2 cup (125 mL) tomato juice
1 cup (250 mL) Onion & Herbs liquid seasoning
1 tsp (5 mL) fresh lime juice
1 tbsp (15 mL) fresh chopped cilantro
1 tbsp (15 mL) chopped chives
Salt and pepper to taste

Directions

To roast garlic: Cut the “growing” end of the garlic bulb; wrap bulb in foil and bake at 350°F (180°C) for about 20 minutes. Squeeze the roasted garlic out of the cloves and set aside.

Vinaigrette: In a blender, combine oil, tomato juice, ¼ tsp (1 mL) of the roasted garlic, liquid seasoning and lime juice; blend until smooth and emulsified.

Add chopped cilantro and chives; season with salt and pepper.
Serve on top of your favourite greens.
