1 tbsp (15 mL) olive oil
¼ cup (50 mL) champagne vinegar
¼ cup (50 mL) sparkling wine, such as Grand Pré Champlain
2 tbsp (30 mL) shallots, finely chopped
2 tbsp (30 mL) green grapes, such as L’Acadie, skins and seeds removed, chopped
1 tsp (5 mL) fresh cracked mixed pepper
Salt and pepper to taste


Combine ingredients and chill. Whisk prior to serving with oysters on the half shell.
