Puffy Bites

Ingredients

Premium soda crackers with salted tops
Ice water
Melted butter
Seasoning salt
Grated parmesan cheese

Directions

No quantities are necessary in this recipe. Just use as many soda crackers as you wish - what you don't eat right away will keep for a few days in an airtight container.

Preheat the oven to 450°F (230°C), and grease a rimmed baking sheet.

Prepare a large bowl of ice water. Immerse 3 or 4 crackers in the ice water at a time, allowing 30 to 45 seconds for the crackers to absorb the water and expand. Using a flat skimmer or slotted spatula, carefully lift one cracker out at a time and place it on the baking sheet, leaving space between each. Repeat with as many crackers as you want.

Lightly drizzle melted butter over each cracker. Sprinkle with seasoning salt and parmesan cheese. Place in oven and reduce heat to 400°F (200°C). Bake for 15 minutes. Reduce heat again to 300°F (150°C) and bake 20 to 25 minutes longer, until golden brown. Do not over-bake. Remove and cool on wire racks before serving.
