
Salmon Cakes
Ingredients
2 cups (500 mL) cooked salmon
1/2 cup (125 mL) bread crumbs
2 large eggs, lightly beaten
2 tablespoons (30 mL) finely chopped onion
1/4 cup (50 mL) all-purpose flour
2 tablespoons (30 mL) butter
Salt and pepper to taste
Directions
In a medium-sized mixing bowl add the salmon, bread crumbs, eggs and onion. Season to taste with salt and pepper. Stir with a fork until all ingredients are blended together. Form into balls and flatten into cakes. Place flour on a plate and coat both sides of the salmon cakes. Melt the butter in a large non-stick fry pan or skillet over medium heat. Add the salmon cakes and cook, turning once, for approximately 10 minutes or until lightly browned.
