
Salmon Roll
Ingredients
1 pound (500 g) cooked salmon
1/4 - 1/3 cup (50-75 mL) regular or light mayonnaise
2 teaspoons (10 mL) freshly squeezed lemon juice
3 tablespoons (45 mL) diced celery
2 tablespoons (30 mL) finely diced onion
8 hot dog-style buns
Directions
In a medium-sized mixing bowl break up the salmon into bite-sized pieces.
In a small mixing bowl, combine the mayonnaise, lemon juice, diced celery and onion. Add to salmon and mix well. Fill the hot dog buns with the salmon salad and serve with your favourite green salad.
