Spring Radish & Pineapple Salsa
Ingredients
1 cup (250 mL) diced radish1/2 cup (125 mL) diced pineapple
1/2 cup (125 mL) finely diced red onion
3 tbsp (45 mL) chopped fresh cilantro
Juice of 2 limes
1 tsp (5 mL) lime zest
1/2 tsp (2 mL) sea salt
1/4 tsp (1 mL) ground pepper
Directions
In a medium bowl, lightly toss the radish, pineapple, onion and cilantro. Mix in lime juice and zest. Toss lightly and finish with salt and pepper.
Cover and refrigerate for one hour before serving. Makes 2-4 servings.
